Description

Mediterranean flavors dance in these Greek chicken skewers, a culinary journey that brings the essence of Greece to your plate. Crispy feta fries complement juicy marinated chicken, offering you a taste of summer’s warmth and Greek hospitality.

Ingredients

Scale
  • 1.5 lbs chicken thighs or breasts (boneless, skinless, cut into chunks)
  • 3 tbsps olive oil
  • 1 lemon (juice)
  • 3 garlic cloves (minced)
  • 1 tsp dried oregano
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp paprika
  • 1.5 lbs russet potatoes (or frozen fries)
  • 2 tbsps olive oil
  • salt (to taste)
  • pepper (to taste)
  • 0.5 tsp garlic powder
  • 0.5 tsp dried oregano
  • 0.33 cup feta cheese (crumbled)
  • 2 tbsps fresh parsley (or dill, chopped)
  • wooden or metal skewers (optional, wooden skewers should be soaked in water for 30 minutes)

Instructions

  1. Marination: Combine olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper in a bowl. Coat chicken thoroughly and refrigerate for 30 minutes to 8 hours to intensify flavors.
  2. Skewering: Thread marinated chicken pieces onto skewers, ensuring even distribution.
  3. Cooking Chicken: Grill over medium-high heat for 10-12 minutes, rotating periodically until chicken is fully cooked with light charring. Alternatively, bake in preheated 425F (220C) oven for 18-20 minutes, turning midway.
  4. Potato Preparation: Slice potatoes into fry shapes and season with olive oil, salt, pepper, garlic powder, and oregano.
  5. Fry Roasting: Arrange seasoned potato fries in a single layer on baking sheet. Roast in 425F (220C) oven for 25-30 minutes, flipping once to achieve crispy golden exterior.
  6. Finishing Touch: Immediately after removing from oven, sprinkle fries with crumbled feta and chopped parsley or dill.

Note: For a quicker option, substitute homemade fries with frozen variety, following package baking instructions.

Notes

  • Allow chicken to sit in marinade for full 8 hours to develop deeper, more complex Greek-inspired flavors and tenderize meat thoroughly.
  • Monitor grill or oven temperature closely to avoid overcooking; chicken should reach 165°F internal temperature without becoming tough.
  • Ensure potato fries are cut uniformly and spread in single layer to guarantee even browning and crispy exterior with soft interior.
  • Can substitute grilling with indoor grill pan or broiler for similar charred effect if outdoor grill unavailable; adjust cooking time accordingly.
