Sausage, Potato and Kale Soup

Easy and Delicious.
Ingredients:

1 Bunch Kale
1 Medium Onion
3-4 Medium Potatoes
2 Cloves Garlic
4 tbsp. Olive Oil
1 lb. Italian Sausage
2 qt. Chicken broth
1 qt. Water
1 pt. Heavy Cream

Directions:

Prep:
- Separate the Kale leaves and stems (discarding stems).
- Mince the onion and garlic cloves.
- Clean potatoes and cut into bite size pieces

1. In a 4 qt. pot (on medium heat), add the minced onion and garlic cloves to the olive oil. Allow to cook until onions are translucent (or to your own liking).

2. Add the chicken broth and water, bring to a boil.

3. Add kale leaves to this mixture, cover pot and allow to cook for 20 minutes (until kale leaves are soft).

4. Cook sausage in oven on 400 degrees until done (25-30 minutes). When finished, remove from oven and cut into bit size pieces.

5. Add potatoes and sausage to 4 qt. pot and allow mixture to cook until the potatoes are soft, stirring occasionally.

6. When potatoes are ready, lower heat and add heavy cream (you don't want to do this while to mixture is boiling as it will cause the cream to split).

7. Enjoy!
