Corn chowder with kale

Description:
A good way to use fresh corn now that it's getting cooler out!
Ingredients:

4 slices bacon, sliced into thin strips
1 med-large onion, diced
1-2 Tbs butter or olive oil
3 Tbs flour
2 cups milk
2 cups chicken or veg stock
3-4 stalks celery, diced
3 potatoes, diced (peeled or not, as you wish!)
2-3 ears worth of fresh corn (sliced off cobs) - could also use frozen
kale (as much as you want) - roughly chopped
salt and pepper to taste

Directions:

Put bacon in large pot on med-low heat and cook for 5 minutes, stirring. Add onions and butter/olive oil, and continue cooking another 5 minutes, or until onions are soft. Add flour and cook on med heat, stirring, 1-2 minutes. Slowly add milk, stirring constantly, and raise heat to med-high. Add stock, and bring to simmer. Add all vegetables except kale, and cook until almost soft (15-20 minutes). Add kale and cook until kale is tender (another 10-20 minutes). If needed, stir in more milk to thin. Season to taste with salt and pepper.
