Champignons Bordelaises (Mushrooms)

Description:
A nice change from the same old sauteed mushrooms. Goes great with a steak.
Ingredients:
  • 1.25lb mushrooms
  • 1/3 c veg oil
  • blk pepper
  • 1.5Tbsp butter
  • 1/3 c bread crumbs
  • 3Tbsp finely chopped shallots
  • 3tsp finely chopped parsley
Directions:
  1. Wash & quarter mushrooms.
  2. Heat oil, when near smoking add mushrooms & pepper.
  3. Cook, stirring & shaking, over high heat. Mushrooms will give up a lot of liquid.
  4. Cook till liquid evaporates, stirring often, till mushrooms are slightly crisp & brown - abut 15 minutes.
  5. Drain, return skillet to heat and add butter.
  6. When butter foams, add mushrooms, cook, shaking & stirring, 3 minutes.
  7. Add bread crumbs, stir, add shallots & continue to stir and shake about 45 seconds.
  8. Add parsley, stir.
