Zuke-A-Mole (Summer Squash Guacamole)

Ingredients:
  • 3 pounds summer squash and/or zucchini
  • Approximately 1/2 head garlic
  • 1 large onion (preferably sweet type such as Vidalia)
  • 1 teaspoon kosher salt
  • 2 tablespoons olive oil, plus 1/4 cup
  • 1/2 cup basil and/or mint leaves, stems removd, coarsely chopped
  • 1/2 cup parsley, stems removd, coarsely chopped
  • 2 tablespoons juice of lemon
  • salt and pepper to taste
Directions:
  1. Slice zucchini in half, lengthwise.
  2. Separate garlic cloves but keep
  3. skins on.
  4. Quarter onion.
  5. Place vegetables in roasting pan and slatherwith the 2 tablespoons of olive oil and the teaspoon of salt. Roast until extremely tender, at least 1 hour and up to 90 minutes.
  6. Let vegetables cool slightly and squeezegarlic from skins.
  7. Place all vegetables into bowl of food processorand pulse.
  8. Add herbs. Puree until smooth and combined.
  9. Add lemon juice and salt. Drizzle in remaining olive oil. Taste for seasonings and
  10. adjust accordingly.
  11. Chill and serve with crackers, pita crisps, crudite, or use as sandwich spread.
