Simple Roasted Potatoes

Description:
An easy, quick, and delicious side dish for a variety of entrees.
Ingredients:
  • Several medium potatoes (red/white or a mix of white and sweet potatoes, about 1 per person)
  • A few cloves fresh garlic
  • Olive oil
  • Rosemary
  • Kosher salt
Directions:
  1. Peel & dice potatoes (if using baby or red potatoes, can leave peel on)
  2. Peel & mince garlic
  3. Put potatoes in a large bowl
  4. Sprinkle with garlic, rosemary, salt, and olive oil
  5. Toss to mix ingredients and coat potatoes lightly with oil
  6. Spread on a baking sheet
  7. Bake at 400 till lightly browned, turning once
