German Apple Pancake

Description:
A simple and easy breakfast or brunch dish - apples optional.
Ingredients:
  • 1 cup all-purpose flour (up to half whole wheat flour)
  • 1 cup milk (whole, low-fat, or skim)
  • 4 eggs
  • 1 tablespoon butter
  • 1 apple (optional)
  • Brown sugar (optional)

 

Note: To adjust quantity, use 1 egg, 1/4 cup flour and 1/4 cup milk per person.

Directions:
  1. Peel and core apple and slice thinly.
  2. Heat butter in an ovenproof skillet.
  3. Add apple slices to skillet.
  4. Put flour in a mixing bowl.
  5. Make a "well" in the flour.
  6. Pour milk in well, whisk in gradually.
  7. Whisk in eggs.
  8. Pour batter over apples.
  9. Sprinkle with brown sugar if desired.
  10. Bake at 350 for about half an hour, or until puffed and golden brown.
  11. Serve plain, or with butter, maple syrup, or jam.
