Description:
A quick and tasty way to use zucchini and summer squash. It is not very hot, despite the jalapenos.
Ingredients:
  • 1 medium onion
  • 1 medium zucchini
  • 1 summer squash
  • 1-2 fresh jalapenos
  • chopped fresh cilantro (optional)
  • 1/2 tsp salt
  • vegetable oil or cooking spray
Directions:
  1. Dice onion, zucchini, and squash
  2. Seed and mince jalapenos
  3. Heat oil in saute pan and cook onion till slightly transparent
  4. Add zucchini, squash, jalapenos, and salt. Cover, and cook till tender, stirring occasionally.
  5. Sprinkle with fresh cilantro, if using.
